Adequate lighting, red or blue, can enhance a wine to the point of improving the flavor. This is what emerges from the study published in the Journal of Sensory Studies by researchers at the Institute of Psychology of the Johannes Gutenberg University in Mainz, Germany.
The research was conducted on the choices made by 500 participants, who were asked to assign a score and establish a possible price for a variety of wines. During the experiment it was found that the ambient lighting in which they were presented wines played an important role: the same wine if offered in a room illuminated with red or blue obtained better scores than when they were irradiated by a green light or white. Furthermore, the same wine appeared 1.5 times sweeter than if the room was lit up in red instead of white, and always under the red light, the participants were willing to pay one euro more than when it was shown under a light source green.
"Our study - says Daniel Oberfeld-Twistel researcher Johannes Gutenberg University - showed that the color of the light environment in which you can taste a wine it can affect the taste, even when there is no direct effect on the color drink "," This' is probably due to the fact that if we perceive as pleasant lights, also enhances the flavor of food, "said Oberfeld-Twistel. "Further research will provide to shed light on this phenomenon. Meanwhile, the sommelier should taste the wines in a neutral light to make sure the result is not influenced by external factors," he said.
